Tom-yam pasta recipe

Tom Yam paste is a Thai dish with a spicy and sweet-sour taste, based on a fragrant broth with herbs, spices and various ingredients.

Here is a simple recipe for making Tom-Yam pasta:

Ingredients:

Chicken broth - 4 cups
Lemon grass - 2 stalks, cut crosswise into pieces
Kaffir lime leaves - 4-6 pieces
Shiitake mushrooms or other mushrooms - 200 g, chopped
Shrimp - 200 g, peeled and decapitated
Tomatoes - 2 medium, sliced
Coconut milk - 1/2 cup
Salmon or other fish - 150 g, cut into pieces (optional)
Garlic - 3 cloves, crushed
Sesame oil - 1 teaspoon
Tom-Yam paste - 2-3 tablespoons (available in Asian stores)
Fish sauce - 2 tablespoons
Lime juice - from 1-2 limes
Sugar - 1 teaspoon
Red chili pepper - to taste, chopped
Cilantro - for decoration

Instructions:

In a saucepan or deep frying pan with a thick bottom, heat the sesame oil. Fry the garlic and Tom-Yam paste until fragrant.

Add chicken broth, lemon grass and Kaffir lime leaves. Bring to a boil.

Pour in coconut milk and fish sauce. Add sugar and red chili pepper. Cook over medium heat for 5-7 minutes.

Add mushrooms, tomatoes, shrimp and fish (if using). Cook for another 3-5 minutes until the shrimp turns pink and the fish is cooked.

Season the soup with lime juice to taste.

Serve the Tom Yam pasta hot, garnished with fresh cilantro.
